• 3 cups (750 mL) Ontario Strawberries, mashed
  • 4 tsp (20 mL) lemon juice
  • 1 pkg (49 g) light fruit pectin crystals
  • 12 pkg low calorie sweetener (1 tbsp/15 mL each) or to taste



  1. In large saucepan, combine strawberries and lemon juice; stir in pectin crystals. Bring to boil over High heat, stirring.
  2. Boil hard, stirring constantly, for 1 minute. Remove from heat; stir in sweetener. Stir for 5 minutes, skimming off any foam.
  3. Pour into clean jars or containers with tight-fitting lids, leaving 1/2-inch (1 cm) headspace.
  4. Seal and let cool. Label and store for up to 1 week in refrigerator or up to 1 year in freezer.
