Glazed Strawberry Pie
Retro jello is the secret to this vintage strawberry pie. The recipe is easy for a weeknight and yet impressive enough for company fare. It’s also adaptable to raspberries with raspberry-flavoured gelatin.
Ingredients
- 1 baked 9- or 10-inch pie crust can use graham crumbs or pastry shell
- 1 quart fresh strawberries cut in half and layered in baked shell
Glaze:
- 3/4 cup granulated sugar
- 3 tablespoons cornstarch
- 1 1/2 cups cold water
- 3 oz package strawberry jello
Instructions
- Combine sugar, cornstarch and water in a 4-cup measure. Microwave this mixture for 5 or 6 minutes, 2 minutes at a time, stirring each time till thickened and clear. Then add 1 package of strawberry jello and stir till dissolved.
- Pour carefully on strawberries, filling all the little spaces. Put in fridge to chill and set. Serve with whipped cream.
