Earl Grey Coffee Cake with Strawberries & Whipped Cream
Ingredients
- 1 cup granulated sugar
- 2 large eggs
- 3/4 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup full-fat plain yogurt
- 2 cups all-purpose flour
- 2 tablespoons quality loose-leaf earl grey finely ground
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups sweetened whipped cream
- 2 cups strawberries quartered
Instructions
- Preheat the oven to 325(f) degrees. Grease & line a 9-inch round cake pan.
- In a large mixing bowl whisk together the sugar & eggs until the mixture is fluffy & pale.
- Add the oil, vanilla & yogurt. Whisk until combined.
- Sift in the flour, tea, baking powder, baking soda & salt. Stir until batter comes together.
- Transfer to the prepared cake pan & bake until the top bounces back to touch, about 35 to 40 minutes.
- Let cool completely before transferring to a serving plate. Top with whipped cream & strawberries.
