Earl Grey Coffee Cake with Strawberries & Whipped Cream

Ingredients
  

  • 1 cup granulated sugar
  • 2 large eggs
  • 3/4 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup full-fat plain yogurt
  • 2 cups all-purpose flour
  • 2 tablespoons quality loose-leaf earl grey finely ground
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups sweetened whipped cream
  • 2 cups strawberries quartered

Instructions
 

  • Preheat the oven to 325(f) degrees. Grease & line a 9-inch round cake pan.
  • In a large mixing bowl whisk together the sugar & eggs until the mixture is fluffy & pale.
  • Add the oil, vanilla & yogurt. Whisk until combined.
  • Sift in the flour, tea, baking powder, baking soda & salt. Stir until batter comes together.
  • Transfer to the prepared cake pan & bake until the top bounces back to touch, about 35 to 40 minutes.
  • Let cool completely before transferring to a serving plate. Top with whipped cream & strawberries.
