Glazed Strawberry Pie

Retro jello is the secret to this vintage strawberry pie. The recipe is easy for a weeknight and yet impressive enough for company fare. It’s also adaptable to raspberries with raspberry-flavoured gelatin.

INGREDIENTS

1 baked 9- or 10-inch pie crust (can use graham crumbs or pastry shell)

1 quart fresh strawberries, cut in half and layered in baked shell

Glaze

3/4 cup granulated sugar

3 tablespoons cornstarch 

1 1/2 cups cold water

1 3-oz package strawberry jello

DIRECTIONS

Combine sugar, cornstarch and water in a 4-cup measure.  Microwave this mixture for 5 or 6 minutes, 2 minutes at a time, stirring each time till thickened and clear. Then add 1 package of strawberry jello and stir till dissolved.  Pour carefully on strawberries, filling all the little spaces.  Put in fridge to chill and set. Serve with whipped cream.
